Never Cook Bacon Naked cookbook cover

"I've only had your cookbook since our dinner at the cafe..last Friday and I've made three Basque dinners...the pork loin stuffed with the yummy dried apricot stuffing, the chicken pie with the amazing rice crust and the fishcakes with the artichoke pesto sauce, which we now call, "The to Die for Sauce"! Your recipes are so easy to follow and my family cannot decide which one they liked best. I'm making the cabbage with the lime dressing for a potluck at work on Friday. I know everyone will want the recipe, but I'm going to tell them just to get the cookbook! Best 20 bucks I've spent in a long time!!! - Blessings, Jan and Bruce (customer testimonial from our Facebook page)

Just one of the delicious recipes from the Never Cook Bacon Naked cookbook:
Albacore Fishcakes silverware art
Makes about (20) 2" cakes or 4 large patties
3 six oz cans water packed, light albacore tuna
3/4 cup coarsely chopped bread crumbs
1/2 cup shredded parmesan cheese
1 egg, whisked lightly
1 rib celery, finely diced
1 large zucchini, shredded
Spray Oil

Preheat oven to 350 degrees.

Into a large mixing bowl, place tuna including water from the can. The water from the can adds flavor as well as liquid to moisten the dish. Add all other ingredients and mix well.

On a cookie sheet, place parchment paper and spray a fine mist of cooking oil overall.
Using a #24 (1 ½ oz) ice cream scoop, make fish balls about the size of a golf ball. Place the fish balls on the parchment paper lining the cookie sheet, spaced apart and not touching. Flatten each fish ball slightly with the palm of your hand. The cheese will melt a little bit and you don’t want them to melt together so be sure they have a little space between them. Cook for about 15 - 20 minutes. Every oven is different, so test for doneness by looking at the bottom of one of the fish cakes. It will have browned moderately when done. Luckily, fishcakes are very forgiving - it’s pretty hard to burn them. Nicely browned on the bottom and served hot with a zesty sauce topper they are yummy!

Choose one of the sauces in this book to top these delicious Tapas. Personally, I like the artichoke, pesto, mushroom sauce.
