Albacore Fishcakes silverware art
Makes about (20) 2" cakes or 4 large patties
3 six oz cans water packed, light albacore tuna
3/4 cup coarsely chopped bread crumbs
1/2 cup shredded parmesan cheese
1 egg, whisked lightly
1 rib celery, finely diced
1 large zucchini, shredded
Spray Oil

Preheat oven to 350 degrees.

Into a large mixing bowl, place tuna including water from the can. The water from the can adds flavor as well as liquid to moisten the dish. Add all other ingredients and mix well.

On a cookie sheet, place parchment paper and spray a fine mist of cooking oil overall.
Using a #24 (1 ½ oz) ice cream scoop, make fish balls about the size of a golf ball. Place the fish balls on the parchment paper lining the cookie sheet, spaced apart and not touching. Flatten each fish ball slightly with the palm of your hand. The cheese will melt a little bit and you don’t want them to melt together so be sure they have a little space between them. Cook for about 15 - 20 minutes. Every oven is different, so test for doneness by looking at the bottom of one of the fish cakes. It will have browned moderately when done. Luckily, fishcakes are very forgiving - it’s pretty hard to burn them. Nicely browned on the bottom and served hot with a zesty sauce topper they are yummy!
